Heat the skillet over medium heat and coat the pan with a small amount of canola oil. Place some of the green onion and a 1/2 cup of batter onto the hot skillet. Place even amounts of seafood on top of the pancake and some thinly sliced red pepper. 3. Let it cook for 4 minutes, until the bottom is lightly brown. Xu Bin and his mother are from Beijing - the home of wheat flour pancakes with various fillings (including chives, pork and mushroom). Its the simple shallot version for which Bin and his mother are most renowned. Its just flour, oil and shallots, says Bin, very simple. But the pair certainly have a secret touch - its all in the way you knead the dough, apparently. During the Cultural Revolution, times were tough and the family did not have the ingredients to enjoy this specialty. These days in Australia, though, they make 500 pancakes a week with ingredients Xu Shu Rui says are even better than the ones they had back home. The finished pancakes are pan-fried for a few minutes and enjoyed with one of Xu Shu Ruis special sauces. Not only does everyone in Beijing love shallot pancakes, everyone in Sydney love them too. Bin will also cater for parties bringing mountains of delicious pancakes, sauces and other dishes as required.

Ingredients: - 8 oz of tube shaped Rice Cake (Any shape of Rice Cake works) - *Optional* 20 Pieces of Fish Cake - *Optional* A few ounces of any kind of Beef - 1/2 of an Onion - 1/4 piece of Cabbage - 1/2 of a Carrot - 1 Green Onion - 2 Tbsp of Red Pepper Paste (Gochujang) - *Optional* 1 Tbsp of Crushed Red Pepper (Gochugaru) - 1 tsp of minced Garlic - 2 Tbsp of Sugar - 1/2 Cup of Chicken Broth - 2 tsp of Soy Sauce - 2 tsp of Crushed Red Pepper - 2 tsp of Sesame Seeds - Boil 5 cups of water for Rice Cake. - Slice vegetables all around the same size. - Cook Rice Cake for 3 minutes and then rinse in cold water. - Combined ingredients to make Sauce and bring to a boil, then reduce to simmer until sauce thickens. - Add meat and cook for about two minutes. - Add all the vegetables, rice cake, and fish cake and cook for about 2-3 more minutes. - Finish with green onions and sesame seeds. - Serve hot. This dish is for vegetarians also. You don't need to add any beef, but I like to add beef in mine. This might be a bit spicy for those who don't like spicy foods. One of America's favorite comfort foods, potato soup is served everywhere from steakhouses to country diners. Hi, I'm chef Jason Hill of Chef Tips and today we're making a creamy potato soup recipe that's dressed up with smoked gouda cheese. If you can't find smoked gouda, a steakhouse secret to that creamy texture is a processed cheese such as Velveeta. Creamy Potato Cheese Soup 1 tablespoon dried basil 1/2 stick (4 tablespoons) butter 2 cups shredded smoked Gouda cheese 6 small red potatoes, diced and reserved in cold water to prevent browning 2 diced carrots 2 diced celery stalks 1 white onion, diced 1 teaspoon garlic-shallot puree (or 2 cloves garlic, crushed) 2 cups heavy cream 6 cups chicken broth Turn stock pot on medium high. Melt butter. Add celery, onion, carrots. Cook down until onions are transluscent. Add basil and garlic-shallot puree. After 3 minutes, add potatoes and stir another 3 minutes. Carefully pour in 6 cups chicken broth. Boil for 20 minutes, then stir in a roux made from 4 tablespoons flour and 4 tablespoons butter. Wait a few minutes for the soup to thicken slightly. Add cream. Whisk and simmer for 20 minutes. Slowly stir in cheese and melt it down. After cheese is melted, pour into bowls and season with salt and fresh cracked pepper.
