Uncle Dan's Oyster Sauce Chicken
4.78 min. | 5.0 user rating | 2229 views

This recipe kicks the other oyster sauce chicken recipe's ass. Yes, I said it. This was very good. 5 lbs. chicken thighs 1/4 c. flour Chopped green onion Seasoned salt Pepper Sauce: 1/2 tsp. pepper 1/2 c. oyster sauce 3 Tbsp. sugar 3/4 c. water Combine sauce ingredients and cook on low heat until dissolved. Season chicken with seasoned salt and pepper, coat in flour, and fry. Pour cool sauce over hot chicken. Garnish with chopped green onion (I added it in to the sauce when it cooled). Enjoy For those with oyster allergy!!! Thank you to MsFlowerYang who posted the following: Hoisan sauce can be a substituted for oyster sauce. Hoisan sauce is sweeter then oyster sauce so instead of 3 tablespoon of sugar, you can do half sugar and half salt so the sauce wouldn't be so sweet from the Hoisan sauce.

Grannie's Stuffed Aburage

Don't forget to enter the contest giveaway!! youtu.be Sorry for the pre-ad video. It is not allowing me to turn it off!! I have struggled with it for 5 minutes now GRRRR I know I have already loaded a stuffed aburage recipe, however, as I said, I will more times than not do it because I always like to see if other interpretations are better. This one is nicely named! lol So while it is named "grannie", it is not our granny's recipe. It came from one of my old school local cookbooks that I found at the thrift store. All three of us agree that this recipe kicks the old one's BLEEP! 1 pkg aburage (fried bean curd) Cut in half and open. Boil aburage in about 3 inches of water, with one packet of dashi, 1/2 cup shoyu and 2 tablespoons of sugar. (No time given, but I only boiled it for 1-2 min) Mixture: Ground pork (No measurement but I used about 1 - 1.25 lbs) 1/2 c. green onion, chopped 1/2 c. round onion, diced 1 can water chestnuts, diced (I used only about 1/3 of the can) Shrimp (optional) 1 egg 1/4 c. shoyu 2 Tbsp. oyster sauce 2 cloves garlic, grated 1 tsp. sesame oil 1 Tbsp. sugar salt and pepper to taste Stuff aburage with mixture. Microwave (covered) 15-20 (depending on your microwave). Bake (covered) 20-40 minutes at 350 degrees or until cooked. If I remember correctly (as I did this a while ago), we did decide that we didn't care much for it being microwaved. We will likely steam it the way we do our other recipe or try the oven. It just seemed to be a little dry in ...

Hey y'all! I needed a seafood man for Shrimp Week, so I called in my brother Bubba, the best seafood man I know! Bubba owns the wonderful Uncle Bubba's Oyster House restaurant which has been in business for five years now, so he knows his way around a shrimp! He also has a great cookbook called Uncle Bubba's Savannah Seafood Cookbook, which has more than 100 down home, Southern-style recipes. I'm so proud of my brother! Just like we used to day when we were kids, we pickled some shrimp together. We used beautiful new glass jars to hold the dish, and the shrimp came out looking beautiful and tasty. My son Bobby has a wonderful pickled shrimp recipe that we included below. Bubba and I put our own spin on our pickled shrimp dishes. I always suggest that when you cook something for the first time you follow the recipe but after that have fun with it and give the dish your own signature. Bubba took his home with him, so he could enjoy it all by himself! Love and Best Dishes, Paula

"Moonen and Finamores encyclopedic volume appears at just the right moment. Nutritional awareness has given fish cooking even more prominence within the culinary arts, and efficient transportation now brings fresh fish into the nations interior. With this book to guide both neophyte and expert, no one need any longer fear to cook any of the deeps denizens. In instructive photographs, Moonen and Finamore show how to clean, bone, and portion both finfish and shellfish. Recipes are organized by cooking method—broiling, poaching, roasting, grilling, steaming, frying—providing the creative cook some latitude in determining what to do with the fish at hand. Succeeding chapters cover such fish basics as chowders, fish cakes, and salads. A final section offers unique takes on side dishes such as coleslaw. Both the books organization and its comprehensive coverage make this a necessary addition to any cookbook collection." -- Mark Knoblauch Rick Moonen visits Google's Mountain View, CA headquarters to discuss his book "Fish Without a Doubt" as part of the Authors@Google series.

Kamayan Festival 2009 @ REPUBLIC OF CAVITE RESTAURANT
1.43 min. | 5.0 user rating | 21813 views

The Philippines country culture starts in a tropical climate divided into rainy and dry seasons and an archipelago with 7000 islands. These isles contain the Cordillera mountains; Luzons central plains; Palawans coral reefs; seas touching the worlds longest discontinuous coastline; and a multitude of lakes, rivers, springs, and brooks. The population—120 different ethnic groups and the mainstream communities of Tagalog/Ilocano/Pampango/Pangasinan and Visayan lowlanders—worked within a gentle but lush environment. In it they shaped their own lifeways: building houses, weaving cloth, telling and writing stories, ornamenting and decorating, preparing food. The Chinese who came to trade sometimes stayed on. Perhaps they cooked the noodles of home; certainly they used local condiments; surely they taught their Filipino wives their dishes, and thus Filipino-Chinese food came to be. The names identify them: pansit (Hokkien for something quickly cooked) are noodles; lumpia are vegetables rolled in edible wrappers; siopao are steamed, filled buns; siomai are dumplings. All, of course, came to be indigenized—Filipinized by the ingredients and by local tastes. Today, for example, Pansit Malabon has oysters and squid, since Malabon is a fishing center; and Pansit Marilao is sprinkled with rice crisps, because the town is within the Luzon rice bowl. When restaurants were established in the 19th century, Chinese food became a staple of the pansiterias, with the food given Spanish names ...

Old School Diner
1.98 min. | 4.0 user rating | 3527 views

The experience begins in the restaurants parking lot, which is, inexplicably, carpeted with large, mismatched remnants. The building, painted the color of cooked shrimp, is covered with old tools; yard art includes flea market finds, and near the front door, a wheelchair presumably waiting to assist anyone who dares order the house specialty (read on). Chef Jerome Brown greeted us, total strangers and all, with kisses in the front room. An ebullient man in his chefs whites and toque who looks more than a little like Chef on South Park, hes obviously proud of his place, which hes apparently expanded by adding a room at a time, each with a different name and theme. He led us through each one before depositing us in the biggest with a bar, bandstand, rear-projection TV and several nice-looking but mismatched dining tables with comfortable chairs. The walls are crammed with photos, plastic sea creatures and movie mementos. The menu tells it all: Oysters, catfish nuggets, deviled crab, even lobster and gator tails, as well as barbecued ribs (Like going to heaven without dying!) smothered in Chef Jeromes You Da Man! Sauce. But forget all that: Youre ordering the house special, The Wheel Chair Platter ($45). Why? As the menu clearly states: Ben Affleck says, Why Ask? Trust Your Chef! (Yes, the movie star and part-time resident of nearby Hampton Island boasts his own private table.) This glorious festival of food consists of the best of whats at hand that day in our case, a heap ...
Come Eat: Fried Rice
4.50 min. | 3.6666667 user rating | 529 views

Slices of bacon or spam, char-siu (for this, I made it with leftover ham) 1 tablespoon of oil 4 cups of leftover rice 2 eggs soy sauce (and oyster sauce if available) 3 stalks green onions, sliced Heat pan on medium, add oil, sliced meat, stir fry. Add rice, make a well in the middle, add a little oil, add the two eggs - cook a little before stirring or immediately start to mix all ingredients. Add soy sauce, oyster sauce, stir, add green onions, stir. Since I used the leftover rice, I stored the fried rice back in the rice cooker, kept on warm. Hands playing with legos belong to Mikey.
