Piece by piece, dip your breaded cod into the beaten eggs, and then place the pieces onto the heated pan. 11. Lower the heat to medium and cook it. 12. Turn it over using a spatula or spoon. 13. Grilled Tuna Sandwiches (serves 4) 1 cup mayonnaise 1 garlic clove, minced 1-2 tablespoons of chopped fresh dill (to your liking) 1/2 teaspoon grated lemon zest 1 tablespoon of fresh lemon juice Kosher salt Freshly ground black pepper 4 FRESH sushi-grade tuna steaks 4 bakery hamburger buns or kaiser rolls 4 large leaves green leaf lettuce In a small bowl, whisk together the mayonnaise, garlic, dill, lemon zest, lemon juice, 1/2 teaspoon of salt, and 1/4 teaspoon pepper. If the sauce is too thick, add an extra squeeze of lemon juice. Rub the tuna steaks with olive oil, and sprinkle generously with salt and pepper on both sides. Grilled Haddock with Pineapple-Cilantro Sauce: You will need 2-3 lbs. fresh Haddock, fish grate for grilling, Medium saucepan for sauce, gas grill and spatula.
